  • 1 lb lean beef stew meat, trimmed and cut into 1-inch cubes
  • 1 cup pearl barley, rinsed
  • 2 tablespoons olive oil

  • 2 parsnips, peeled and diced
  • 1 medium celery stalk, diced
  • 1 small sweet potato, peeled and diced
  • 6 cups low-sodium beef broth
  • 1 cup water
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and freshly ground black pepper, to taste
  • 2 cups fresh spinach, roughly chopped (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.
  2. Add the beef cubes in batches, browning on all sides without overcrowding. Transfer browned beef to a plate and set aside.
  3. In the same pot, add the diced onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and cook for another 1 minute until fragrant.
  5. Return the beef to the pot. Stir in the carrots, parsnips, celery, and sweet potato. Cook for about 5 minutes, stirring occasionally.
