  • 2 tablespoons olive oil or vegan butter
  • 2 tablespoons nutritional yeast (optional, for savory flavor)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large pot, combine rinsed brown lentils and vegetable broth. Bring to boil, then reduce heat and simmer uncovered for 25–30 minutes, or until lentils are tender but not mushy. Drain any excess liquid and set lentils aside.
